With Christmas around the corner, I can’t help but make festive treats for the whole family! I am such a dark chocolate and orange lover so if you are like me these are sure to make your heart smile!
“It’s the most wonderful time of the year” – Andy Williams
Ingredients
- 2 cups pitted dates
- 1 cup mixed nuts, pumpkin seeds, cranberries
- 1/2 cup oat meal {use a milling blade to make your own}
- 1/3 cup desiccated coconut, reserve some for rolling
- 1/3 cup melted coconut oil
- 1/3 nut butter
- 1 tsp cinnamon
- 2 tbsp fresh orange juice
- 1 tsp date syrup
- 1 tbsp orange zest
- 70% dark organge/naartjie chocolate
Method
- Soak the dates in boiling water for 5 minutes and drain.
- Add to a high speed blender or food processor and pulse. Add the oat meal, mixed nuts, pumpkin seeds, cranberries and pulse again.
- Add the coconut, nut butter, coconut oil, cinnamon, date syrup, orange juice and blend for 60 seconds. I like the crunch of the nuts but if you prefer a smoother consistency blend for another 60 seconds.
- Place a medium saucepan with some water over a medium heat and boil. Once boiling add the chocolate to a pyrex dish and place on top of the saucepan and melt for 4 – 5 minutes.
- Using a tablespoon roll the mixture into balls with the left over coconut and place on some baking paper.
- Sprinkle with the orange zest and drizzle over the melted chocolate and serve.
- Enjoy on Christmas eve with a glass of red wine or nut milk of choice!
